Banana-Coconut Muffins with Carob Chips (Gluten-Free & Paleo)

1. Preheat oven to 350 degrees and spray muffin tin with non-stick baking spray.

2. Smash the banana in a large bowl until smooth.  Add in the other wet ingredients and stir to combine.

3. Combine the dry ingredients in another bowl and whisk to evenly incorporate.

4. Add the dry ingredients to the wet ingredients and stir until combined. Fold in 3 Tbsp of carob chips.

5.  Using an ice cream scoop, spoon the batter into the muffin tins so they are 2/3 full (about 6 muffins).  Top with remaining 1 Tbsp carob chips.

6. Bake the muffins for 20 minutes until cooked through. (If you insert a knife it will come out clean).
